Fish noodles from Bangka - Indonesia



@ Noodles Ingredients:

200 g egg noodles
500 ml of water
2 tablespoons vegetable oil
1 tsp soy sauce

@ Ingredients Fish:

200 g mackerel fish, cut into small dice
1 tsp lemon juice
1 clove garlic, finely chopped
1/4 tsp salt
1/4 tsp pepper
oil for sauteing

@ Ingredients sauce:

5 grains of red onion, finely chopped
2 cloves garlic, finely chopped
3 tsp soy sauce
2 tablespoons soy sauce
2 tsp vinegar cook
2 whole cloves
1 tsp salt
1/2 tsp pepper
1/4 tsp cinnamon powder
1/4 teaspoon nutmeg
1 liter fish stock
oil for sauteing

@ Material complementary:

100 g bean sprouts, wash, pour hot water, drained
2 stalks celery, thinly sliced
1 tbsp fried shallots

@ How to Make:

1. Noodles: Boil water, put the egg noodles and cook until done. Lift, flush with cold water, drain. Mix with vegetable oil and soy sauce, stir well and set aside.
2. Fish: Mix the fish, lime juice, garlic, salt, and pepper. Let stand for 15 minutes. Heat oil, put the fish, stir until cooked. Remove and set aside.
3. Gravy: Heat oil and saute onion and garlic until fragrant. Pour the fish stock, bring to a boil. Enter soy sauce, soy sauce, vinegar cook, cloves, salt, pepper powder, cinnamon powder and nutmeg powder. Bring to a boil again, remove from heat.
4. Presentation: Tata noodles in a serving bowl, put sprouts and stir fry the fish on top, cover with sauce. Sprinkle with chopped celery leaves and fried shallots and serve.


Indonesianya :

@ Bahan mie:

200 g mie telur
500 ml air
2 sdm minyak sayur
1 sdt kecap asin

@Bahan ikan:

200 g ikan tengiri, potong dadu kecil
1 sdt air jeruk nipis
1 siung bawang putih, cincang halus
1/4 sdt garam
1/4 sdt merica bubuk
minyak untuk menumis

@Bahan kuah:

5 butir bawang merah, cincang halus
2 siung bawang putih, cincang halus
3 sdt kecap asin
2 sdm kecap manis
2 sdt cuka masak
2 butir cengkih
1 sdt garam
1/2 sdt merica bubuk
1/4 sdt kayumanis bubuk
1/4 sdt pala bubuk
1 liter kaldu ikan
minyak untuk menumis

@Bahan pelengkap:

100 g taoge, cuci bersih, seduh dengan air panas, tiriskan
2 batang daun seledri, iris halus
1 sdm bawang merah goreng

@Cara Membuat:

1. Mie: Didihkan air, masukkan mie telur, masak hingga matang.    Angkat, siram dengan air dingin, tiriskan. Campur dengan    minyak sayur dan kecap asin, aduk rata, sisihkan.
2. Ikan: Campur ikan, air jeruk nipis, bawang putih, garam, dan    merica bubuk. Diamkan selama 15 menit. Panaskan minyak,    masukkan ikan, aduk-aduk hingga matang. Angkat, sisihkan.
3. Kuah: Panaskan minyak, tumis bawang merah dan bawang putih    hingga harum. Tuang kaldu ikan, didihkan. Masukkan kecap    asin, kecap manis, cuka masak, cengkih, garam, merica bubuk,    kayumanis bubuk, dan pala bubuk. Didihkan kembali, angkat.

4. Penyajian: Tata mie dalam mangkuk saji, beri taoge dan    tumisan ikan di atasnya, siram dengan kuah. Taburi dengan    dengan irisan daun seledri dan bawang merah goreng, sajikan.
